After a certain point, your professions are nothing but money makers. All the gear you can craft is outstripped by drops from instances fairly quickly.
I know a lot of Warriors that went Hippy Stardust (Herbalism & Enchanting), just cause they paid for themselves in terms of selling herbs and DEing drops in instances for enchanting mats.
